Cherry Chili Quinoa with Apricot Salad

Simmer the quinoa first. Chop & saute the beets. Chop the onions, cherries, and apricots. Wash, dry and prepare the salad greens. Saute the onions and spices. Toss with the quinoa and cherries. Assemble the Apricot Salad, adding extra nuts or even a sprinkle of your favorite crumbly cheese if you are a dairy lover.

Cherry Chili Quinoa

Slightly spiced quinoa & beets are balanced with plump fresh cherries to create a unique sweet & spicy side dish. Of course, using quinoa makes this a lovely protein rich addition to salads for an easy vegan meal.

Apricot Salad

The maple syrup dressing lightly kisses the summer sweetened apricot on top of bitter arugula with toasty almonds. Substitute your favorite greens, nuts, or even add a sprinkle of your favorite cheese.
