Cucumber & Melon

 

Thinly sliced cucumbers and melon, especially watermelon with a an acidic splash of lime or rice wine vinegar makes a bright delight to have on the side. Cut the melon into a similar size to the cucumbers.

Ingredients

  • 1 cup cucumber, peeled and thinly sliced
  • 1 cup watermelon, thinly sliced, deseeded
  • 1 teaspoon lime, or rice wine vinegar
  • 1 pinch salt, to taste

Serving Size: 1 Person



 

Preparation Instructions

Peel the cucumber if desired and thinly slice into rounds or half moon shapes. Thinly slice the melon, removing any seeds. Cut into shapes similar in size to the cucumber slices.

Toss with the lime juice or rice wine vinegar and a sprinkle of salt. Add more to taste if desired.
