Winter

Leafy Leftover Turkey Salad

 

Use up leftovers to top a leafy green salad. Cranberry sauce becomes dressing. Stuffing becomes croutons and turkey ties it altogether.

Ingredients

  • 2 tablespoons cranberry sauce
  • 2 tablespoons greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 4 radishes, or a few salad turnips
  • 1 apple, washed and dried
  • 4 cups lettuce, washed, dried and torn into pieces
  • ¼ cup hazelnut, toasted and chopped
  • ¾ cup turkey, cooked and torn into shreds

Serving Size: 2 People



 

Preparation Instructions

Whip together the cranberry sauce, yogurt and olive oil. Set aside.

Thinly slice the radishes or turnips and apples. Arrange the lettuce on plates or in a large bowl. Top with the radishes, apples, chopped hazelnuts, shreds of turkey and drizzle on the dressing.
