Winter

Warm Cocoa, Apple & Chard Salad

 

This salad is a bit adventurous. Be tempted to try it, if only to experience the silky texture of the cocoa throughout the winter greens. Apples, dried cherries & the Cocoa Vinaigrette are warmed and tossed onto creamy goat cheese, crunchy almonds and fresh chard. Substitute cranberries for the dried cherries and another dark leafy green for the swiss chard, if unavailable. Leave out the cheese for a dairy-free or vegan option.

Ingredients

  • 1 bunch chard, washed well
  • 1 tablespoon coconut oil
  • ¼ cup dried cherries
  • 1 apple, thinly sliced, core discarded
  • ¼ cup cocoa vinaigrette
  • ¼ cup almond, toasted or cocoa dusted
  • 2 tablespoons cacao nibs
  • 2 ounces goat cheese, crumbled

Serving Size: 2 People



 

Preparation Instructions

Remove the chard stems and roughly chop. Stack the leaves and thinly slice- set aside in a salad bowl.

In a skillet over medium heat, melt the coconut oil. Add the chard stems, dried cherries and apple slices. Saute lightly for a couple minutes until the apples start to wilt and take on color. Pour in the Cocoa Vinaigrette and toss until it starts to steam.

Drizzle the apples & sauce over the chard leaves that are waiting patiently in the salad bowl. Toss. Sprinkle in half the chopped almonds, cacao nibs and goat cheese.
Toss. Sprinkle the rest on as garnish.

Serve immediately.
