Carrot Frisee Slaw, Strawberry Almond Lentils & Grilled Asparagus

Cook the lentils first. As they simmer chop the vegetables, strawberries and mince up the almonds to toast. Whisk the dressing up for the lentils. Heat up the grill and prepare the asparagus for grilling. Toss the Carrot Frisee Slaw together and serve with the two side dishes.

Strawberry-Almond Lentils

Slightly sweet with lots of toasty crunch from the almonds. Add bits of fresh vegetables or herbs that you have available to make this salad even bigger and more substantial. Any lentils can work for this but we used French lentils.

Carrot Frisee Slaw

Sweet carrots and bitter frisee (or curly endive) are tossed together with a bright vinegar dressing and chewy dates to balance out each flavor. Crispy bacon pieces or salty nuts would complement this salad nicely. Substitute radicchio or Belgian endive for the frisee, if available.

Grilled Asparagus

This could easily become your favorite way to eat asparagus as thick stalks take on amazing slightly charred flavor with an almost creamy center. The actual cooking time depends on the thickness of the asparagus, just watch it and pull it when they are tender to the bite with dark stripes.
