'Shamrock' Butter

Wood sorrel is often mistaken for the traditional Irish shamrock, so in this spirit whip up your own ‘shamrock’ butter with the bright, almost lemony sorrel instead. If you had visions of mint shamrock shakes when you read shamrock butter and want to try mint butter instead, I welcome the idea although I have yet to try it myself.

Apple & Turkey Grilled Cheese

During turkey season you can use leftover turkey or your favorite deli-sliced meats (roast beef or even ham could work). Thin slices of apple add crunch and sweetness. If available, a few leaves of spinach are a delicious addition.

Apple Clafoutis

Oh la la. So good and very easy. I recommend making this at the beginning of the week, say on a Sunday evening. If you do, you’ll have on a hand a really delicious breakfast that’s great with coffee or tea, and has a good balance of protein and carbohydrates.

Apple Pecan Granola

Sweetened with applesauce, this granola is not too sweet in crunchy clumps. Add in a handful of dried apples and nuts if you like.

If you are especially sensitive to gluten, buy gluten-free specific oatmeal. This is more low-glycemic if you add the nuts, although they are optional.

Apple Quesadilla

Its simple, but surprisingly lovely. I won’t pretend this is complicated. Just use a fabulous apple and your favorite cheddar. Enjoy.
