Prepare the hummus first or in advance. Chop up the ingredients for the salad and toss together. Make this vegan by using tofu instead of the feta. Serve with your favorite bread, crackers or pitas.

Hummus

A food processor works best for Hummus for a creamy, smooth consistency. A blender is a decent substitute, but some blenders will require a bit of water. If you are without equipment, mash this with a potato masher. It will be chunky- but still quite tasty.

Greek Salad

Dive into this, when you want a chunky salad of vegetables. Leave out the feta to make it vegan or even crumble in a bit of tofu. Add lettuce and a protein to make it a main dish. Many fresh herbs will work in this salad such as oregano, parsley, basil, dill or mint- substitute in what you have available.
