Jameson Chicken with Kale-Potato Cakes & Turnips

Marinate the chicken. If the mashed potatoes are not ready for the pancakes- prepare these now. While the pancakes are starting to sear, cut up the turnips. Roast these alongside the chicken. Any extra kale, can be wilted and served too.

The classic Irish whiskey makes roasted mustard chicken a bit more exciting. It is marinated. Roasted. And then glazed with the other half of the marinade & bit of honey to finish it off.

Kale Potato Pancakes

Take any leftover over Kale Mashed Potatoes and whip them up into pancakes. If you just have leftover mashed potatoes, fold in some cooked kale. The rest of the ingredients help keep them together. Feel free to add a bit more flour if they seem too sticky. Rice flour works well to make these gluten-free.
