Blend up the dressing in advance. Assemble and sear the quesadilla. As it cooks, prepare the salad. If taking for lunch on the go, store all three separate with the salad dressing ready to toss on. If possible, keep the quesadilla warm or in a container ready to be warmed wherever you are dining, such as a microwave, oven or toaster oven. Make this gluten-free with corn tortillas.
