Squash Biscuits + Gravy

1. If the squash is not yet roasted and pureed, please start here.
2. Preheat the oven. Mix the butter + dry ingredients together for the biscuits.
3. Start to sear the sausage, removing it from the casings if needed. Warm the milk.
4. Mix the wet + dry ingredients together for the biscuits and bake them up.
5. As the biscuits bake, sprinkle the flour into the sausage. Pour in the warm milk while stirring and simmer it up until it is thickened.
6. To serve, open up the hot biscuits and scoop a generous amount of the sausage gravy on top.

Squash Biscuits

Pureed squash boosts the nutrients, color and fun in these biscuits. Start with the pureed squash, mashed sweet potatoes or even canned pumpkin instead. Earth Balance is a reasonable substitute for the butter.

Sausage Gravy

Biscuits and gravy are one of my favorite comfort foods. I didn’t realize this fun fact about myself, until I was a vegetarian and it was suddenly on the list of meals that I missed. Since eating meat again, I have found myself eating some very sad representations of this meal often enough (breakfast buffets, anyone?) that I started to make it myself at home and I am pleased to say it is easy-peesy. These Squash Biscuits or Sweet Potato Biscuits pair well with this sauce for a complete meal.
