Baked Potato

 

The potato seems to be a controversial vegetable. Some consider it nutritious and balanced and on the other extreme, it is viewed as high in the simple carbohydrates that everyone should run and hide from. But, then there is the easy baked potato wrapped in a nutrient packed skin and free of frying oil, creamy sauces, or other additives. Of course, most of us get in trouble with the toppings, right? We hope to inspire new seasonal decorations for your Baked Potato throughout the year. And now, here is the simple way to prepare them.

Ingredients

  • 2 russet potatos, whole
  • 1 pinch salt, or more as desired
  • 1 tablespoon butter, unsalted, or olive oil, optional

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 375.

Scrub the outside of the potatoes without removing any of the skin. Pierce lightly with a fork or a pointy knife- all over. Avoid getting too excited and puncturing your hand in this process.

Sprinkle the outside with a touch of salt- if desired.

Bake for 30-40 minutes, depending on the size of the potato, until it is hot and baked through. To check, wrap in a towel and give it a squeeze. Keep baking until it is tender.

The skin will be crisp on the outside. Slice a couple inches into the middle and push on the skin to smoosh it apart. Season with the salt and butter or olive oil to taste. Fluff some of the white innards with a fork.

Serve with your favorite healthy seasonal toppings.
