Chicken Piccata

 

This simple chicken dish with the essence of lemon & wine can be whipped up quickly and paired with everything from pasta to risotto to creamy or grilled vegetables.

Ingredients

  • ¾ lb chicken, thighs or breasts, boneless, skinless
  • ½ cup flour, whole wheat, or brown rice flour for gluten-free
  • 1 teaspoon black pepper, to taste
  • 1 teaspoon salt, to taste
  • 1 tablespoon olive oil, extra virgin
  • 2 tablespoons butter, unsalted, or more olive oil
  • ½ cup white wine
  • ¼ cup lemon juice
  • ¼ cup capers

Preparation Instructions

Find the thinnest part of the chicken. Pound the breasts until they are an even thickness, not going beyond the thinnest part, ideally about a half inch thick. Place the flour in a shallow dish and season with salt and pepper. Add the chicken breasts to the flour, dip and flip coating both sides and lightly shake off any excess.

Add the olive oil and half of the butter in a sauté pan over medium heat. Sear the breasts on each side for 4-7 minutes until golden. Remove the chicken. Add the white wine to deglaze the pan and pick up any brown bits. Stir in the lemon juice, capers and finish with the remaining butter.

Drizzle the sauce generously onto each chicken breast to serve.
