Creamed Corn

 

A traditional Autumn dish even though corn is typically done growing for the season. Fortunately, frozen corn loved up with some heavy cream works well for this simple starchy side.

Ingredients

  • ½ cup onion, diced
  • 1 tablespoon butter, unsalted
  • 2 cups corn, fresh or frozen
  • 2 tablespoons cornmeal
  • 1 cup heavy cream

Serving Size: 4 People



 

Preparation Instructions

Place a saucepan over medium-high heat. Add the onion and butter and sauté lightly until the onion is translucent. Add the corn, sauté lightly for 2-3 minutes until the corn is hot.

Reduce the heat to medium-low, sprinkle in the cornmeal and whisk, breaking up some of the corn slightly. Pour in the heavy cream and simmer lightly for 3-4 minutes until slightly thickened. It can be cooled at this point and heated just prior to dinner.

Serve in an oven-safe dish and warm in the oven for 10-15 minutes just before serving,
