Dijon Roasted Potatoes

 

Small potatoes are roasted and then coated with Dijon mustard for a simple yet flavorful starchy side.

Ingredients

  • 1 lb potatoes, small, thin-skinned, such as yukon gold
  • tablespoon olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tablespoon dijon mustard, or more to taste

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 400.

Cut the potatoes into quarters or halves, just an even size.

Toss with half of the olive oil. Spread on a baking sheet and season with the salt and pepper to taste.

Roast for 20 minutes. Remove from the oven, whisk together the Dijon & olive oil. Toss in the potatoes.

Return to the oven and bake until soft to the bite and lightly golden on the outside, about 10-20 more minutes.
