Ginger Chicken over Snow Peas

 

A simple Asian ginger marinade livens up chicken which is sweetened up with a pile of stir fried snow peas. Substitute green beans, snap peas, broccoli or something tasty of your choice for the snow peas if you can’t find them.

Ingredients

  • 10 ounces chicken tenders (breast) , or sliced chicken breasts or thighs
  • 2 tablespoons ginger, finely minced or crushed
  • 1 clove garlic, finely minced or crushed
  • 1 tablespoon soy sauce, or tamari (wheat-free/gluten-free)
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon honey, optional (agave or brown sugar work too)
  • 1 lb snow peas, washed and trimmed as needed
  • 1 teaspoon vegetable oil (high heat)

Serving Size: 2 People



 

Preparation Instructions

Place the ginger, garlic, soy sauce, rice wine vinegar and honey (if using) in a plastic bag or bowl with lid. Shake well to combine. Add in the Chicken pieces. Marinate for 10-30 minutes turning over the chicken periodically.

Place a skillet over medium-high. Once hot drizzle in the vegetable oil. Shake the marinade off slightly. Place the chicken pieces in the hot oil, spread out in the pan, not overlapping. Sear for 3-5 minutes, flip over and continue searing until the chicken is cooked through.

Remove the chicken from the pan and toss in the snow peas. Add a splash of water if they are sticking and steam slightly.

Serve the snow peas and chicken on top of steamy brown rice.
