Summer

Greek Wrap

 

Combine leftover vegetables from a Greek Salad with a bit of Hummus in a wrap for a quick healthy lunch.

Ingredients

  • 1 tortilla, wrap, such as spinach
  • ¼ cup hummus
  • ¼ red onion, cut in thin slices
  • 1 tomato, or a few cherry tomatoes, cut into slices
  • 1 bell pepper, or half of a medium, core removed, cut into slices
  • ½ cucumber, sliced or cut in chunks from the salad
  • 6 kalamata olives, pitted and chopped roughly
  • 1 ounce feta cheese, about 1-2 tablespoons, crumbled, optional
  • 1 cup baby spinach, or chopped fresh spinach

Serving Size: 1 Person



 

Preparation Instructions

Lay out the tortilla- on foil if taking to go.
Spread on the hummus. Sprinkle on the sliced red onion, tomato, bell pepper, cucumbers and olives. Crumble on the feta cheese if using. If using leftovers of the Greek Salad just pile it in.

Tear pieces of the spinach on top. Fold in one end and then wrap the rest around like an open sided burrito.

Fold the foil around it and take to go.
