Grilled Sausage & Kale Pizza

 

The toppings are grilled first, the dough is tossed on and then everything comes together to make dinner. Kale is blended into the tomato sauce to give it extra nutritional boost. Add more veggie toppings as available. The extra flavor of the kale tomato sauce and sausage, means skipping the cheese will still make a delicious grilled pizza pie.

Ingredients

  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 4 leaves kale
  • 2 sausages, links, hot or mild
  • 6 ounces pizza dough , whole grain
  • 4 ounces fresh mozzarella, optional

Preparation Instructions

If your dough needs to come up to room temperature, do this now.

Heat your grill to medium-high heat. Place the sausage on and sear on each side for about 5-10 minutes until it is mostly cooked through. Remove and cool just enough to be able to handle it.

Meanwhile, pace the garlic cloves in the blender and whirl around until roughly chopped. Add the tomato sauce and a pinch of salt if it is unsalted. Add half of the kale. Blend until smooth.

Roll or press your dough out to at least 10 inches in a diameter. Place on the grill. Place the remaining kale on the grill. Flip the kale and then remove once it is crisp.

When the pizza dough has grill marks below, flip it over. Smear on as much of the pizza sauce as you prefer. Add the slices of mozzarella. Cover.

Slice the sausages thinly and tear the kale into pieces. Open the lid and sprinkle on the kale & sausage slices.

Reduce the heat if the pizza is charring too quickly. Cover and continue to cook through until the cheese is melted. Serve hot.
