Red Velvet Beet Smoothie

 

Inspired by the popular Red Velvet cake, beets, their greens, yogurt, and as much cocoa as you like are blended to become a decadent yet nutritious chocolate beet smoothie. We use banana, but frozen peaches, cherries, pineapple, or mango would all contribute nicely. Improvise the fruit as it is available to you. Starting with cooked beets speeds up the process, plan on about 1/2 cup of cooked beets per serving.

Ingredients

  • 1 beet, with greens attached, about 2-3 inches diameter
  • 1 cup banana, frozen, or other fruit
  • 1 cup plain yogurt, or cottage cheese
  • ½ cup milk
  • 2 tablespoons cocoa
  • 1 tablespoon honey, or your favorite sweetener, more or less

Preparation Instructions

If your beet is cooked in advance this makes your morning smoothie a bit easier, but if not start by boiling it until it is tender. Scrub the beet, trim the greens and place the root in a saucepan of water. Bring up to a boil and cook until it can be stabbed with a fork. Usually about 15-30 minutes depending on the size. If you cut it in half the cooking process will speed up a bit. Once cooked, cool in cold water while peeling off the skin. Dice the beet and place it in the freezer to cool slightly.

Tear up the beet stems and leaves and place in the blender. Add the yogurt, milk, frozen fruit, and cocoa. Blend until smooth. Add the chilled beets and blend until smooth again. Taste. Add the honey or your preferred sweetener to taste.

Serve!
