Smoky Orange Sauce

 

Perfect for drizzling on Roast Duck or Chicken. Lapsang Souchong Black Tea is the best for this and we highly recommend a good quality variety such as from Seven Cups. Instead of the broth use the strained drippings after the duck or chicken is roasted.

Ingredients

  • 2 tablespoons lapsang souchong black tea
  • 2 cups broth, chicken or duck
  • 1 cup orange juice
  • 1 tablespoon honey
  • 1 pinch salt, to taste
  • 2 tablespoons butter, unsalted, or chicken or duck fat

Serving Size: 6 People



 

Preparation Instructions

Bring the tea, broth, and orange juice up to a boil. Simmer for 5-10 minutes until the sauce reduces by about a 1/3. Strain out the tea leaves.

Whisk in the honey and a pinch of salt. Taste.

Whisk in the butter or duck/chicken fat. Taste.

Serve hot.
