Spinach & Brown Rice Casserole

 

A comforting side or a vegetarian main dish of greens, brown rice, eggs & cheese. This starts with cooked brown rice. You will want to start with 1 cup of dry for every 3 cups cooked. Substitute another green, such as collards or kale.

Ingredients

  • 3 eggs
  • ½ cup milk
  • ½ cup onion, chopped
  • 1 teaspoon fresh thyme, dried or 1 tablespoon fresh
  • 1 pinch nutmeg
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups brown rice, cooked
  • 2 cups monterey jack , shredded
  • 4 cups spinach, fresh and chopped
  • 1 teaspoon olive oil

Serving Size: 4 People



 

Preparation Instructions

Preheat the oven to 375.

In a large bowl, whisk together the eggs, milk, onion, thyme, nutmeg, salt and black pepper. Fold in the rice, half of the cheese and the fresh spinach. Turn the mixture into a 4-quart casserole dish that is lightly coated with olive oil.

Bake uncovered for 40 minutes. Sprinkle the remaining cheese on top and continue to bake for 5-10 more minutes until the cheese is melted.
