Spring

Spring Onion White Bean Dip

 

Spring onions are roasted until caramel colored and then whipped up with white beans & rosemary to create a rich, yet vegan dip. For the spring onions, select medium-large sized bulbs. A food processor will give you a creamier dip, but using a potato masher will at least get the job done, albeit a bit chunkier.

Ingredients

  • 3 spring onions, about 1 pound
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • cup white beans, cooked
  • ½ cup water, or broth
  • 1 tablespoon rosemary, fresh, minced
  • 1 tablespoon lemon juice

Preparation Instructions

Preheat the oven to 350. Slice any off either end of the onions and remove the papery and tough outside layers. Cut into 1 inch thick slices. Spread in a small baking dish. Drizzle on half of the olive oil, half of the balsamic and half of the salt and pepper. Just a splash on each onion slice. Bake for about 35-45 minutes until the onions are tender and slightly golden. Flip the onions every 15-20 minutes as they bake.

Meanwhile, place the white beans, water or broth, rosemary, and lemon juice in a food processor with the remaining olive oil, balsamic, salt and pepper. Blend for several minutes until it is the consistency you desire.

Alternatively, use a potato masher or even a pastry cutter or wire whip to smash all of these ingredients together until they are as smooth as can be.

When the onions are perfectly caramelized, tender and golden, place them in the food processor and pulse a few times or mince them up and toss them with the mashed beans.
