Sweet Onion Quesadilla

 

A simple way to enjoy any extra sweet onions, add a pinch of smoky paprika and the quesadilla is complete.

Ingredients

  • 2 tortillas, corn or flour
  • ½ sweet onion , thinly sliced
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • 2 ounces monterey jack

Serving Size: 1 Person



 

Preparation Instructions

Add a splash of oil to a pan over medium heat. Add the onions slices and saute until wilted and starting to pick up some golden color.

Remove from the pan. Wipe out any residual parts in the pan and add the remaining splash of oil. Lay a tortilla in the sizzling oil. Fill with onions, smoked paprika and the cheese. Place the other tortilla on top. Reduce the heat to low.

Sear until the bottom tortilla is golden and the cheese is starting to melt. Flip over and sear until the other side is golden.

Cut into wedges and enjoy.
