Salmon Raspberry Salad

Whip up the Raspberry Dressing to start. This will last a few days in the fridge as well if you make a large batch. Prepare the salmon and place in the oven to roast. Quickly prepare the salad ingredients and assemble in a large bowl or in individual dishes. Serve the salmon alongside with a generous drizzle of Raspberry Dressing all over.

Raspberry Dressing

Whisk together mashed fresh or defrosted raspberries. Perfect for berries that are not super sweet as this dressing has a touch of honey in it.

Salmon with Herbs de Provence

The beautiful Herbs de Provence creates a delicate crust on this roasted salmon. Rub on a bit of Dijon mustard for another element of flavor. If you do not enjoy mustard it is fine to leave it off and just sprinkle & press the herbs directly on to the fish.

Raspberry Salad

A sassy pink side salad or a main dish with an elegant piece of salmon. Leave the cheese out to make it vegan or dairy-free. And the nuts are optional too. If possible, cook the beets ahead or to save even more time and if pickled beets are handy use those instead.
