Cheese & Mustard Zucchini Rice Delight

In college, my two dearest friends introduced me to Cheese & Mustard Delights that we toasted up in their dorm room with a heavy layer of bright yellow mustard & cheese on toast. It was melty, gooey, heaven. I took this idea and tossed it with rice and a layer of zucchini slices. Starting with leftover rice means this comes together quick to bake up into a simple casserole that kids will gobble up.

Ingredients

  • cup brown rice, cooked
  • 2 eggs
  • ¼ cup mustard, yellow
  • ¾ cup cheddar cheese, shredded
  • 1 zucchini, thinly sliced

Serving Size: 2 People



 

Preparation Instructions

If the rice is not already cooked through, start with that.

Preheat the oven to 350.

Whip the mustard, eggs and salt together. Fold in the cooked rice. Butter a very small baking dish (larger if you multiple this recipe). Spread the yellow rice mixture in the base of the casserole dish. Top with the slices of zucchini and sprinkle on the shredded cheddar.

Bake until the cheddar has melted through about 20-25 minutes.
