Cajun Rubbed Chicken

from Grilled Cajun Chicken & Okra with Watermelon Salad, the Week of September 15, 2013.
View the previous recipe for this meal.

Just toss the spices in a bag, add the chicken and shake until coated. Tossing it around in a bowl works as well. Use any cut of chicken. We prefer bone-in ourselves, but it could work with boneless, skinless too.

Ingredients

  • 2 tablespoons smoked paprika
  • 1 tablespoon fresh oregano
  • 1 teaspoon white pepper
  • ½ teaspoon celery seed
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 pinch cayenne
  • 1 lb chicken, bone-in breasts, wings and/or legs

Serving Size: 2 People

Preparation Instructions

Combine all of the spices in a large bowl or plastic bag.

Heat a grill on medium high or your oven to 375.

Add the pieces of chicken. Shake gently to coat evenly.

Place on the grill for about 8-12 minutes on each side, depending on the cut and thickness of the meat.

Alternatively, place in the oven for 20-25 minutes, flipping over at least once half way through.

If using a thermometer the temperature should read 170. Remove the chicken, cover and allow it to rest for about 5 minutes before digging in as the temperature will increase slightly in the center.
