Applesauce

from Sweet Potato Latkes with Applesauce & Pecan Butter, the Week of November 24, 2013.

This is a quick, saute in their own juices applesauce that can be made just prior to eating. Juice helps sweeten tart apples, but if are starting with sweet apples, simply use water.

Ingredients

  • 4 apples, core removed
  • ½ cup apple juice, more or less, as needed

Serving Size: 4 People



 

Preparation Instructions

Finely mince the apples and place in a saucepan over medium heat. Slowly add juice to keep the apples moist and simmering rather than sticking to the pan. Continue to simmer, adding juice or water as needed until it is mushy and applesauce like.

If you prefer a smoother applesauce, blend in a food processor or blender.
