Curry Turkey Burgers

 

Hint of curry, sprinkle of green onions & carrots and a few dollops of mango chutney turn typically dry ground turkey into delightful burgers for the grill. Place in a bun or pita bread stuffed with more veggies, mango chutney and yogurt sauce (skip this if you avoid dairy).

Ingredients

  • 1 cup carrot, grated
  • 3 green onions, finely minced
  • ¼ cup mango chutney, divided
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1 lb ground turkey
  • ¼ cup plain yogurt, optional
  • 1 cup lettuce, torn in pieces
  • 4 whole wheat pitas

Serving Size: 4 People



 

Preparation Instructions

Heat a grill to medium.

Fold together the half of the grated carrots, half of the green onions, half of the mango chutney, all of the curry powder and all but a pinch of the salt. When they are nicely seasoned fold in the ground turkey. Form into 1/4 pound patties.

Place on the grill and sear on one side for 5-8 minutes until char marks appear. Turn over and sear on the other side for 5-8 minutes.

Meanwhile, whisk together the remaining green onions and mango chutney with the yogurt and a pinch of salt. Open up a pita or bun and stuff it with lettuce, the remaining shredded carrots and a generous dollop of the sauce. When the burgers are heated through, place inside and serve while hot.

Add any other veggies such as sliced radishes, baby spinach, shredded carrots, avocado slices or even tomatoes as desired.
