Apple Pecan Salad

The dressing is cinnamon-spiced and simple to toss together. Raw or candied pecans can be used in this recipe. Candied are easy to purchase or try making them from scratch by following our simple recipe for Citrus Candied Pecans.

Ingredients

  • 2 cups lettuce, mixed greens
  • ½ cup orange juice, or apple juice
  • 2 tablespoons lemon
  • 1 tablespoon dijon mustard
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1 carrot, peeled and shredded
  • 1 apple, thinly sliced in strips
  • ½ cup pecan, raw or candied

Serving Size: 2 People



 

Preparation Instructions

Combine the orange juice, lemon, dijon, maple syrup and cinnamon. Shake or whisk well.

Wash and dry the lettuce. Arrange on a plate and top with the shredded carrot, apple slices and pecans— candied or not.
