Red + White Quinoa and Apple Pecan Salads

Prepare the quinoa. Chop the beets, start to sauté. As they cook, prepare the remaining vegetables for each salad. Add the cauliflower when appropriate. Mix each dressing separately. Toss on the quinoa salad. Just prior to serving dinner, arrange the apple salad and drizzle the dressing on top.

Red + White Quinoa

Red quinoa, white quinoa, red beets, white cauliflower… this savory salad ends up a tie-dyed toss of pinks & magentas, but it is really the sum of its bitter & almost sweet parts coming together. This works well hot as a dinner side dish or cold as a salad on the go.

Apple Pecan Salad

The dressing is cinnamon-spiced and simple to toss together. Raw or candied pecans can be used in this recipe. Candied are easy to purchase or try making them from scratch by following our simple recipe for Citrus Candied Pecans.
