This breakfast can be a main dish on its own as it has a bit of veggies, fiber and protein, but a fruit salad alongside would also be welcome. Use gluten free bread as a substitute if needed. And skip the parmesan to make it dairy free.

Mushroom Skillet Strata

Mushrooms, carrots, & onions lend a twist to the usual bread & egg morning. The parmesan is optional if you can’t eat it.
This comes together quickly all in the pan, making clean up easy. Plan to use a cast iron pan or a skillet that is oven safe.
