Goddess Roasted Vegetable Wraps

 

Inevitably there are leftovers of the Goddess Dressing and other then a simple salad what more could be made? Why not combine some other leftover roasted vegetables with a bit of lettuce or baby spinach, leftover chicken or shrimp, drizzle of the Goddess Dressing and wrap it all up in this wrap. It would also be tasty with a sprinkle of your favorite cheese or avocado slices.

A simple lunch sent from a goddess.

Ingredients

  • 1 tortilla, wrap, whole wheat
  • 2 tablespoons green goddess dressing, store-bought or homemade
  • 1 cup broccoli, roasted or other roasted vegetables
  • 4 ounces chicken, cooked & shredded or cooked shrimp
  • 1 cup lettuce, clean & torn into pieces or baby spinach

Serving Size: 1 Person



 

Preparation Instructions

Warm the tortilla slightly in a dry skillet. This will make it easier to fold.

Spread the Green Goddess Dressing on the tortilla. Top with the roasted vegetables, chicken or shrimp and finish with the lettuce or baby spinach.

Fold on side in. Take the side just next to it and fold it over the filling, tucking everything inside and roll around. One side will be left open and this is where to start munching.
