Winter

Hummus Wrap

 

Wrap up simple veggies with your favorite store-bought hummus or make your own hummus.

Ingredients

  • 2 carrots
  • 8 ounces mushroom, sliced
  • 1 cup hummus, store bought or homemade
  • 2 cups romaine lettuce, chopped
  • 2 whole wheat tortillas

Serving Size: 2 People



 

Preparation Instructions

Peel and shred the carrots. Thinly slice or chop the mushrooms. Spread the hummus, mostly in the center from one end to the other on to each tortilla. Sprinkle in the carrots, sliced mushrooms and finish with lettuce.

Fold one end of the hummus side up a few inches. This will be the bottom of the wrap. Roll the tortilla around itself and then wrap tightly in plastic wrap or foil if taking to go.
