Sweet & Sour Grilled Cheese

 

Leftovers of the sweet & sour cabbage? Smash it into bread with some white cheddar, such as the Irish Killarney’s. Sauerkraut will work if you want this without the work of cooking down the cabbage.

Ingredients

  • 2 slices irish soda bread
  • 1 teaspoon dijon mustard
  • 1 tablespoon butter, unsalted
  • 2 slices cheddar cheese, ideally the irish killarney's aged white cheddar
  • ½ cup cabbage, leftovers cooked down, sweet & sour style or sauerkraut

Serving Size: 1 Person



 

Preparation Instructions

Spread each slice of bread with the dijon mustard. Heat the butter in a cast iron pan or skillet. Lay the cheese on each slice. Top with the cabbage. Smash together.

Grill on each side over medium heat until the cheese is melted and the bread is golden.
