Matzo Brei with Asparagus

from Asparagus Matzah Brei, the Week of April 1, 2012

Matzo Brei literally means, fried matzo. It tastes like a cross between crepes, French toast, and scrambled eggs. Seasonal asparagus balances nicely with the flavors and adds a few nutrients into an otherwise decadent quick breakfast.

Ingredients

  • ¼ lb asparagus
  • 1 teaspoon olive oil, or water to steam instead
  • 1 sheet matzah
  • 1 egg, beaten
  • 1 pinch salt, more to taste
  • 1 tablespoon butter, unsalted, more if desired

Serving Size: 1 Person



 

Preparation Instructions

Cut the asparagus into 2 inch pieces. Heat the olive oil over medium heat and toss in the asparagus. Saute lightly until hot and slightly tender.

Break the matzah into a shallow dish. Pick up the pieces, leave the crumbs and rinse in a strainer with hot water for about 15 seconds until the matzah is just rehydrated, slightly wilted and no longer crunchy.

Whisk the egg & salt in the shallow dish with the crumbs. Dip the wet matzah into the eggs, thoroughly coating.

Melt the butter in a skillet over medium heat. Add in the soaked matzah, sear and flip the pieces. Toss in the asparagus and toss to combine.

Serve hot. If you are feeling extravagant, drizzle on some melted butter.
