Matzah Brei

A cross between French toast, scrambled eggs and crepes, at least in flavor and texture. Fruit, fresh or syrupy, are lovely drizzled on top. Plan on about one matzah cracker and one egg per serving.

Ingredients

  • 1 sheet matzah
  • 1 egg, beaten
  • 1 pinch salt
  • 1 tablespoon butter, unsalted

Serving Size: 1 Person



 

Preparation Instructions

Break the matzah into a shallow dish, pick up the pieces and rinse in a strainer for about 15 seconds until the matzah is just rehydrated, slightly wilted and no longer crunchy.

Whisk the egg & salt in the shallow dish with any remaining crumbs. Dip the wet matzah into the eggs, thoroughly coating.

Melt the butter in a skillet over medium heat. Add the soaked matzah, sear and flip the pieces.

Serve with fresh fruit, jam, sugar or more melted butter on top.
