Asian Plum Sliders

from Asian Plum Sliders with Grilled Sweet Potatoes and Red Chili Green Beans, the Week of August 21, 2016.
View the previous or next recipe for this meal.

Mini burgers are packed with plums and Asian flavor. Make your own plum sauce from scratch with seasonal fresh plums or buy store bought and simply add a few fresh plums.

Ingredients

  • 3 plums
  • 1 green onion, thinly sliced
  • 2 tablespoons cilantro, finely minced
  • 1 clove garlic, finely minced
  • 1 tablespoon ginger, finely minced
  • 1 tablespoon soy sauce
  • 8 ounces ground beef
  • ½ red onion, thinly sliced
  • 1 summer squash, thinly sliced on the diagonal
  • ¼ cup asian plum sauce
  • 6 slider buns

Serving Size: 2 People

Preparation Instructions

Mince one or two of the plums until you have about 1/2 cup of minced plums.* Thinly slice the remaining plums.

Finely mince the green onion, cilantro, garlic, and ginger. Fold these with the plums and soy sauce into the ground beef.

Form into about six* small patties. Heat a grill to medium heat. Place the patties on the grill and sear on each side for about 6-8 minutes.

Saute the red onions lightly in a splash of the oil over medium heat, just until wilted. Add another splash of oil and saute the summer squash until lightly golden. Season each with a pinch of salt.

To assemble the sandwiches, smear some of the plum sauce on each side of the buns. Top with a few of the seared squash, the cooked patties, slices of plum and a few extra leaves of cilantro to garnish. Sandwich together. Serve with extra sauce on the side.

*The original recipe serves two with about 3 sliders per person, so multiple the directions accordingly.
