Apple Quesadillas with Tepary Beans & Sage Cream

Make the tepary beans in advance, and make extras for lunch. Sear up the apple quesadillas and package up to take on the go. Whip up the Sage Cream and package that and the beans, separately. Use corn tortillas to make this gluten-free.

Tepary Beans

Tepary beans are native to the Southwest and are a beautifully textured drought resistant bean. They can be a challenge to find in regular stores, so either buy them online or use dry small white, navy or even black beans instead.

Sage Cream

Sage hangs out in our garden enjoying the cooler days longer than any other herb plant it seems making it an ideal addition for almost any autumn dish. Sour cream or creme fraiche becomes a bit more special with just one extra layer of it’s earthy goodness.
