Asparagus Soup with Smoked Trout and a Roasted Strawberry Salad

Prepare the strawberries and roast them. Sauté the onions for the soup. As both cook, whip up the smoked trout cream. Finish preparing the soup, puree it and keep it warm at very low heat. Wash & dry the lettuce for the salad. Once the strawberries are done, cool them and puree into the dressing. Toss with the greens and serve the soup with a dollop of the smoked trout cream and a slice of the bread. Make it gluten-free by substituting your favorite gluten-free crackers or bread instead.

Roasted Strawberry Salad

Strawberries are roasted until their sweetness intensifies. Blended up with a bit of olive oil and balsamic they become a heavenly dressing to toss on greens. This is simply greens and dressing, but feel free to add your favorite spring vegetables such as snap peas, asparagus or green peas. Even a crumble of cheese or dusting of nuts would compliment this simple salad well.

Asparagus Soup

Brilliant green asparagus soup tastes as bright as it looks. We enjoy ours a tad chunky, but if you prefer a smoother silkier soup simply strain through a wire mesh strainer. It is also lovely hot or chilled.

Smoked Trout Cream

Mmm… Smoky Trout mixed into creaminess. Make this thicker by using all cream cheese or smoother with all strained yogurt or sour cream. You can even make it decadent with creme fraiche.

Okay. This is not exactly a recipe, but rather sometimes the best pairing for your meal is a crusty loaf of French bread. My family lineage is French, what can I say crusty bread seems more appropriate then not. So, here it is.

Let’s call it a reminder. In addition, here are a few tips on how to store it, keep it fresh, or use it up. Whenever possible try to find those crusty gorgeous whole-grain varieties.
