Bacon Shrimp, Squash Soup & Pepita-Chipotle Crackers

Start by roasting the squash if it is not done in advance. Work on the crackers and when they go into the oven start the soup. When the soup is just about done and simmering, start the bacon. Everything will be ready to serve for a simple dinner or Holiday lunch.

Roasted Squash Puree

Do you have a huge, fabulous squash sitting on your table longing to be enjoyed? Roast it all at once, then puree it in a blender or food processor. Use any size squash in this recipe as a base to roast and puree it for other uses— anytime pureed squash or canned pumpkin is called for.

Pepita-Chipotle Crackers

I know what you are probably thinking- crackers? How painfully tedious when there are so many perfectly fine crackers out there. I agree. But, then I made these and between the ease and tastiness- I am now a bit cracker crazy. It was super simple: Blend. Mix. Roll out. Cut. Bake.

Clean up was even faster. Try them. You might become a bit cracker crazy too. A rolling pin and parchment paper will make life a tad easier.

Spicy Squash Bisque

A thick puree of winter squash. This is easiest when you start from already blended, roasted squash. Pureed sweet potatoes or even canned pumpkin could be used instead. Remove the seeds from the jalapeno so as to have more control of the spiciness. Every jalapeno can vary, so start with just the flesh and or add the seeds if you want extra spice.

Bacon Shrimp

As simple and delightful as it sounds. The smoky fat of the bacon is used with the succulent sweetness of shrimp. Seek out wild-caught shrimp from North America for the least polluted & sustainable options. Farm fresh bacon, or at least without nitrates is often your best choice. Add salt with discretion after you have tasted a shrimp.
