Just a touch of bacon adds incredible flavor to a cut of Halibut wrapped in zucchini slices. Toss in extra zucchini to take on the bacon-love as a happily paired side.

If the thought of bacon is too much for you, try the lighter prosciutto or even turkey bacon- please use a little olive oil if you go the turkey route.

Balance everything with a fruity salad of plums & summer squash, avocados & nuts. If you need a starchy side dish, a crusty whole-grain bread would be nice or even a side of wild brown rice.

Bacon Wrapped Zucchini-Halibut

Long, thin strips of zucchini are laid on halibut and then just a bit of bacon is tightly wrapped around bringing them together. No extra fat or salt is needed to season- the bacon is plenty of flavor. Just a squeeze of lemon to brighten it. No flavor is spared as we use up any extra zucchini in a light saute alongside. If you prefer, turkey bacon or better yet prosciutto can be substituted for the bacon.

Plum, Summer Squash & Avocado Salad

Pieces of summer come together in slices within this salad. Basil plays with the plums. Avocados add a rich, creamy bite. Yellow Summer Squash is enjoyed raw & sliced thinly. Toasted Almonds give crunch. This salad is tasty with or without an extra sprinkle of creamy cheese like goat or salty such as feta.
