Beet Bolognese with Wilted Greens

Try buying the beets in a bunch with the greens still attached if possible. They will make the perfect side as the Wilted Greens. Start with the bolognese, either in the crockpot or stovetop. Toss the spaghetti squash in the oven next. After the sauce has had plenty of time to simmer and you are ready for the pasta, boil the water and start the spaghetti. As the pasta cooks, saute the greens. Toss the spaghetti squash with the pasta and serve the sauce on top, with the greens alongside.

Great way to sneak beats into a classic Italian standard as well as reduce the traditional amount of beef. This can all be tossed in a crockpot or sped up in a pressure cooker. The more time you have to let it cook the better as it all melts together. Serve on top of pasta.
