Bison Burgers with Blue Cheese Salad and Sweet Potato Fries

1. Preheat the oven. Slice the onions and start to caramelize.
2. Prepare the sweet potatoes, toss with oil and place in the hot oven.
3. Make the dressing and salad ingredients. You could even double the dressing for a fun dipping sauce for the sweet potato fries.
4. Prepare the burgers. While the caramelized onions and sweet potatoes finish up (in their final 10-15 minutes of cooking) sear the bison burgers. 5. Toast the buns.
6. Toss the salad. Arrange the hamburgers and enjoy!

Beer Braised Onion & Bison Burgers

These burgers were created to celebrate the Bronco’s trip to the Superbowl. Bison aka buffalo is popular in Colorado as are the many, many microbreweries and big breweries (Hi, Coors!) that flourish around my state. The beer adds a slight bitterness to otherwise sweet onions and a drizzle of maple syrup (or your favorite sweetener) balances out the flavor. Just be sure to do add the syrup at the end.

Sweet Potato fries have a bit more of a nutritional boost than their white potato counterparts. Roasting them brings out the natural sweetness, which makes these fries an extra lovely treat to eat.
