Black Bean Tostada with Chipotle Dressing

Saute the onions & cook up the black beans. While it simmers, wash, slice & shred the veggies. Oil up and bake the tostada shells. Whisk together the chipotle dressing to serve at the table. As soon as the tostada shells are hot, assemble and serve.

Black Bean Tostada

Make your tostada feel like a salad with a little surprise below of beans and a crunchy tortilla. You can use as much or as little oil as you like for the tostada shells and add any available veggies for flavor and nutrients. Add a sprinkle of cheese or a dollop of sour cream if you like as well.

Creamy Chipotle Dressing

A creamy, spicy, pink dressing- perfect for putting a spin on an everyday salad. Make this with all mayo, all yogurt or a combination. The jalapeno can vary in spiciness, so taste before adding more chipotle and add until it is as spicy as you prefer.

Use Vegenaise to make this vegan.
