Blood Orange Fish with Citrus, Avocado & Fennel Salad

Slowly reduce the blood orange juice (or regular orange juice). Prepare all of the salad ingredients. Sear the fish. Arrange the salad and serve as soon as the fish is done. If you need a few more carbohydrates with dinner, try a whole-grain French bread.

Blood Orange Fish

Blood orange juice’s magical color looks like deep blackberries, but tastes like a delicate, sweet orange. The juice is reduced to a syrup and simply drizzled on fish. It seems elaborate, but is incredibly simple. If you cannot find blood oranges, you will not be disappointed using regular orange juice. Well, the color will not be quite so brilliant, but just close your eyes when you eat it. ;-)

In winter, seasonal citrus pairs nicely with creamy avocado and crunchy fennel in this simple salad. Use the most beautiful citrus you can find: oranges, grapefruit, blood oranges, or ruby reds. Make sure your avocado is ripe by gently pressing near the stem to avoid bruising.
