Cajun Chicken with Watermelon & Baby Green Pasta Salad

Cooling watermelon goes nicely with this spicy hot cajun chicken. Boil water and start the pasta salad. Shake the chicken in the spice rub and start grilling. While it grills, chop up the watermelon and make this salad. When the pasta is cooled, toss it with the greens and finish it up. Serve while the chicken is hot. Or package it all up for a picnic.

Baby Greens Pasta Salad

More greens than pasta are tossed with a simple vinaigrette. Mix and match your baby greens and fresh herbs as available. Traditional basil works well, but any other variety such as Thai basil or lemon basil can work nicely too. Add more veggies, nuts or cheeses to liven it up or just leave this as simple goodness.

Cajun Rubbed Chicken

Just toss the spices in a bag, add the chicken and shake until coated. Tossing it around in a bowl works as well. Use any cut of chicken. We prefer bone-in ourselves, but it could work with boneless, skinless too.

Watermelon Salad

This simple salad is a bit of a show stopper, combining tangy, bright flavors with salty feta or cojita cheese. If you want to make this dairy-free try toasted pine nuts or sliced almonds instead. We use basil, but bitter arugula or mint would work nicely instead.
