Boil the potatoes. Prepare the dressings and remaining ingredients while the potatoes cook. Make the coleslaw & finish the potato salad. As soon as the potato salad is done, make the burgers and start grilling. While they grill prepare the condiments and toppings.

Creamy Potato Salad

This classic potato salad is slightly creamy with a bit of bite from dijon and extra tang from pickle juice. Add more of the creamy ingredients if you prefer it saucier. If a few other seasonal vegetables are available, mince them up and toss them in.

California Cheeseburgers

I always chuckle when “California” is used as an adjective for food. Often this means adding avocado other times it is simply “lettuce & tomato”. Really? Those items are not enjoyed in other parts of the world? But here I go, using it as an adjective. Feel free to substitute what California-style means to you, for me it includes avocados, tomatoes, lettuce, and sometimes watercress, sprouts or even sunflower seeds. Explore the possibilities you consider coming from the sunny state.

Coleslaw

Yogurt or the more traditional mayonnaise work equally well in this classic salad. Vegenaise works great for a vegan variation. Try strained or Greek yogurt instead of regular for a less runny dressing. Celery seeds add a classic retro flavor, but are entirely optional.
