Carrot Hummus with Pecan Crackers & Crudites

Roast the carrots. Make the crackers as the carrots roast. Roll out the crackers and bake alongside the carrots. Whip the carrots into a hummus. Cut up the veggies in between. To take for lunch, package each item separately and serve altogether.

Carrot Hummus

All the delights of hummus without the garbanzo beans. Be careful, this spread has been known to be addictive. Especially whenever carrots are bright and plentiful.

Pecan Crackers

Pecan meal easily becomes crispy, delightful crackers. Add extra seeds and flavors as you like. If the dough seems to fall apart, just press and piece it together, cut into crackers and then bake them up. If you do not have pecan meal, blend up about 2 cups of whole pecans in a food processor until the mixture is crumbly. Do not blend too long or the oils will release and it will eventually turn into pecan butter.
