For a bit more protein sprinkle on a few of your favorite nuts: walnuts, pine nuts, and pecans are all lovely. The baked tofu transfers well and can be crumbled on the slaw if you like.

Both are fabulous to have on hand for a quick snack at work or home.

With a zesty marinade, this salad is a perfect side dish or a main dish with a sprinkle of nuts to take on the go. As the days continue the flavors meld and make this salad even more magical.

Baked Tofu

One of the easiest ways to prepare tofu, since you simply toss it in the oven after drenching it in soy sauce. Great to take chilled and on the go or cut into pieces and toss with a stir fry.
