Cheesy Squash Winter Nachos

Place the winter squash in the oven to bake. Next, assemble the the nachos, layering with the vegetables and beans. Place in the oven alongside the winter squash. Whip up the white sauce and puree the squash into the Nacho Cheese Sauce. Serve the sauce alongside or drizzled on top of your baked nachos.

Winter Nachos

These nachos are a classic favorite in my family. Although, I admit every time I make them I manage to stuff more and more vegetables into the mix. This is the ‘winter’ version as I shred in roots and greens, then bake it away.

Squash Nacho Cheese Dip

Try this squash based dip instead of that chili dotted, processed cheese stuff so often used on nachos. The orange squash gives it color & a smooth texture, not to mention beta carotene and other great nutrients. Use a strong, sharp cheddar which will add a ton of flavor without needing to add a lot of cheese. If possible, use frozen hatch chili, but a can is an okay substitution when they are out of season.
