Cherry Snap Pea Pasta Salad with Zucchini Meatball Skewers

Boil the water. Chop the veggies for the salad and skewers. Once all of those are prepped, combine the meatball mixture and gently thread the meatballs and zucchini on to the skewers. Cook the pasta. Place the skewers on the grill to sear. Whisk the dressing for the salad, combine with the cooled pasta, and veggies. Serve the warm or room temperature pasta salad with the hot skewers of meatballs and zucchini.

Grilled Zucchini Meatballs

Meatballs are skewered with chunks of zucchini, onions, and whatever is skewerable & grillable. Seared up they get a bit of hamburger crust and flavor. A bit of the veggies are shredded in for extra flavor and moisture as we well.

Creamy Lemon Cherry + Snap Pea Pasta Salad

Creamy pasta salad gets a sophisticated upgrade with jewel cherries and crispy snap peas. Cauliflower gives it a nearly hidden veg, while the pickles give a flavor boost. The creamy dressing can be made dairy free by substituting all-mayonnaise or even vegan with your favorite veganaise style mayo. Walnuts are a great trade for the cheddar or swiss. If for some reason you are not into mayo, greek yogurt can be the entire dressing; maybe whirl in a bit of olive oil for a little extra body and flavor.
